A Brief Introduction to Agave Spirits
Before diving into the tasting experience, it’s essential to understand the key differences between tequila and mezcal. Both spirits are made from the agave plant, but there are significant distinctions between them. This knowledge will enhance your appreciation of the nuances you’ll encounter during the masterclass.
What’s the Difference Between Tequila and Mezcal?
All tequilas are technically mezcals, but not all mezcals can be classified as tequila. The distinction lies in the type of agave used and the regions where they are produced. Tequila must be made from blue agave (agave tequilana) and can only be produced in specific Mexican states, including Guanajuato, Jalisco, Michoacán, Nayarit, and Tamaulipas. On the other hand, mezcal can be crafted from various agave species, making it a broader category of agave-based spirits.

Ingredients: What Are Tequila and Mezcal Made From?
Tequila is exclusively made from the heart or piña of the blue agave plant, which is harvested and processed to create the spirit. Mezcal, however, can be produced from a variety of agave plants, with espadin being one of the most commonly used. This variety of agave contributes to the distinct flavours found in different types of mezcal.

The Production Process
How Are Tequila and Mezcal Made?
The production methods for tequila and mezcal differ significantly, affecting their final taste and aroma.
- Tequila Production
- After the blue agave is harvested, the leaves are removed, and the piña is steamed. This process transforms complex carbohydrates into fermentable sugars.
- Once steamed, the piña is crushed to release its sugary sap.
- Yeast is then added to the sap, converting the sugars into alcohol, which is distilled twice to create tequila.
- Mezcal Production
- In contrast, mezcal production involves a more traditional approach. The agave piña is slow-cooked in underground fire pits, a method that imparts a distinct smokiness to the final product.
- After the cooking process, the piña undergoes fermentation and distillation, resulting in the unique flavours characteristic of mezcal.
